Mango Salsa Shrimp

Mango Salsa Shrimp is a fresh and healthy meal, perfect for nights when you need to get dinner on the table fast!

After a long day, sometimes dinner is the last thing you want to think about.  Luckily, this dish comes to the rescue!  The fresh mango paired with the sautéed shrimp will give you a healthy end to a hectic day.

Here are the ingredients you need to get this meal going:

     Salsa

  • 1 mango, diced into small pieces
  • 1 jalepeño, seeded and finely chopped
  • 1/4 cup purple onion, finely chopped
  • 1/4 tsp Jamaican jerk seasoning
  • 1/4 tsp paprika
  • juice of half a lime

     Shrimp

  • 1 Tbsp olive oil
  • 1 lb shrimp, peeled and deveined
  • 1/2 tsp Jamaican jerk seasoning
  • juice of half a lime

Start by combining all the salsa ingredients in a bowl.  Stir it up and set aside – step one is done!  Heat the olive oil in a skillet over medium heat.  Add the shrimp and sprinkle with the Jamaican jerk seasoning.  Sauté the shrimp for a few minutes until they are pink and cooked through.  Squeeze the lime juice over the shrimp.  Dinner is almost finished!  I like to serve the shrimp and salsa over jasmine rice.  Brown rice or quinoa would be great, too!  Grab a plate, and arrange the shrimp over your grain of choice.  Top with a couple of big spoonfuls of the mango salsa, and enjoy this healthy dinner!

Ingredients

Salsa

  • 1 mango (diced into small pieces)

Instructions

  5. Serve over jasmine rice, brown rice, or quinoa.
