Hi, friends! How is it already the second week of October? Time seems like it's flying by lately. We spent most of last week on a fall beach getaway. I was long overdue for some sun and salt air, and it was glorious. I can't wait to tell you all about the trip, so look for a special beach post later this week! If you are like me, vacations are the perfect excuse to indulge in some favorite (and not so healthy) foods. Yes, I might have consumed an entire bag of Chili Cheese Fritos. Don't judge. Luckily, once vacation ends, I'm always ready to resume healthy eating. This salmon dish is a perfect meal for just that! The salmon, walnuts, and olive oil all contain Omega-3 fatty acids, which we know are great for cardiovascular health. Ready to get a delicious dinner on the table? Here's how!

Preheat your oven to 425 degrees. Go ahead and spray a baking dish or pan with cooking spray. Next, gather up the ingredients – there are only 4!
- 2 wild caught salmon filets (about 4 oz each), skin off
- 1 Tbsp extra virgin olive oil
- 1 tsp no salt seasoning
- 1/2 cup walnuts (finely chopped)
First, chop your walnuts. If you have a food processor, then throw them in and give them a few pulses. You can also chop the walnuts by hand on a cutting board. Just take your time and make sure they are very finely chopped. Spread the chopped nuts out on a plate and carefully stir in the no salt seasoning. Next, drizzle the olive oil over both sizes of the salmon. Dredge the salmon in the seasoned walnuts, making sure to thoroughly coat both sides. Place the salmon in the sprayed baking dish and pop in the oven for 20 minutes. Serve with your favorite roasted vegetable, and your healthy dinner is complete!

Instructions
