Craving a hot meal on a cold winter's night?  Using traditional New Year's Day foods, this delicious soup is sure to hit the spot!

  1. In a large soup pot or dutch oven, heat the olive oil over medium-high heat.          

  2. Add the onion, celery, and carrots. Stir them around for a few minutes until they begin to get soft. 

  3. Add the ham, peas, collard greens, and vegetable broth.

  4. Stir in all the spices.

  5. Reduce heat to a simmer, cover the pot, and cook for about an hour. Stir occasionally and adjust the seasonings if you wish.

  6. Just before serving, stir in the butter. 

  7. Pair the soup with your favorite cornbread!
