In a large soup pot or dutch oven, heat the olive oil over medium-high heat.
Add the onion, celery, and carrots. Stir them around for a few minutes until they begin to get soft.
Add the ham, peas, collard greens, and vegetable broth.
Stir in all the spices.
Reduce heat to a simmer, cover the pot, and cook for about an hour. Stir occasionally and adjust the seasonings if you wish.
Just before serving, stir in the butter.
