Easy Cheesy Broccoli Casserole

This rich and cheesy broccoli casserole is a family favorite.  Easy to prepare, it's sure to be a hit on your table!

  • 20 - 24 oz. frozen broccoli spears
  • 1/4 tsp salt
  • 1/8 tsp. black pepper
  • 8 oz. Velveeta cheese cut into cubes
  • 1/2 cup milk
  • 4 Tbsp butter divided
  • 12 Ritz crackers crushed
  1. Preheat oven to 350 degrees.

  2. Place the frozen broccoli in a large pot and cover with water.  Bring it to a boil, then lower the heat to medium.  Cover with a lid and cook for about 20 minutes, or until the broccoli is really soft.

  3. Drain the broccoli and season with salt and pepper.  Set aside.

  4. Heat a small sauce pan over medium heat. Add the milk and 2 Tbsp of the butter.  Stir to combine.

  5. Once the butter has melted, carefully add the cubed Velveeta cheese.

  6. Turn down the heat, and stir frequently until the cheese is completely melted.

  7. Spray a 2 quart round casserole dish with cooking spray, and add the broccoli.

  8. Pour the cheese sauce over the broccoli.  Stir together, taking special care to break up the broccoli just a bit.

  9. Place the Ritz crackers in a ziplock bag to crush.  Sprinkle the cracker crumbs evenly over the broccoli mixture.

  10. Melt the remaining butter and drizzle over the crackers.

  11. Bake for about 25 minutes, then turn on the broiler for a couple of minutes to brown the top.
